An Inside Guide to Food Trucks at the Silos

Note: Our food trucks change from time to time. You can find the most up-to-date list on our Silos page! Please also keep in mind that each food truck’s hours may vary or change. Check their social media accounts, which are linked, for each of the trucks’ current hours.

If there’s one thing all of the food trucks at the Silos have in common, it’s that each of them houses some of the best local eats in town. You can’t go wrong with any one of them. Whether you’re looking for breakfast, lunch, dessert or a quick snack, there is something for everyone. We hope this tour of our food trucks gives you a little insight into what you can expect here on the Silos grounds next time you’re in Waco!

There is no shortage of delicious barbecue in Texas, and Little Brisket is no exception. Little Brisket is a food truck by Guess Family Barbecue, and from the brisket melt (pictured below) to the pulled pork sandwich, we don’t think you can go wrong.

$8 Daily Special | Pulled pork sandwich + a bag of chips.

Pro Tip | Little Brisket serves breakfast!

We love how Cheddar Box has reimagined the grilled cheese. From different kinds of cheeses to toppings like bacon, basil and guacamole, they have mastered grilled cheese combinations. This truck is loved by visitors and locals alike, so stop in and give one (or a few) menu items a try!

$8 Daily Special | The Old School—classic cheddar cheese on sourdough served with kettle chips.

Pro Tip | They offer a sandwich and mac ‘n cheese combo deal for those who can’t decide on just one option. It’s called the “Power Couple.”

If you’re looking for something out of the ordinary, then you’re going to love Club Sandwich. Don’t be fooled by the name—they’re actually an Asian Fusion food truck, with not a single sandwich on the menu. They specialize in what they call Trashcan Bowls: a bed of rice covered in your meat of choice, veggies and drizzled with one of their signature sauces.

$6 Daily Special | Veggie Rice Bowl—pickled cucumbers, carrots, and onions with cilantro and your choice of sauce.

Pro Tip | This is one of Jo’s favorite lunch spots! She likes the Trashcan Rice Bowl with chicken and a mix of cilantro lime and sriracha ranch.

This pizza spot allows you to build your own pizza or choose from their menu, making it a spot where everyone can find something they love. A fun fact about 900 Degrees—they source their ingredients from Italy!

Pro Tip | Try the margherita pizza (pictured) with chicken on top!


Summer Snow is serving up shaved ice with fun flavors!

Luna Juice bar is a food truck that serves up fresh-pressed juices and smoothies. They have a variety of fresh juice blends with no additives, preservatives or added sugars of any kind. Our favorite treat from Luna Juice is the Blended Watermelon. It’s a summer special served up in a personal-sized watermelon, and is definitely one of the most "Instagrammable" menu items at the Silos.

Pro Tip | If you get the chance to meet the owner, Summer, ask her about the mission behind Luna Juice Bar. We love working with such inspiring people!

A good burger and fries hits the spot any season of the year. The truck has two burger options, the first is a classic beef and the other is their signature bacon and beef blend burger. All of their burgers are served fresh right off the grill.

Pro Tip | Ask them about their Whizzbang fries!

The Heart of Texas Dog House (aka the H.O.T. dog house) serves up gourmet hot dogs, sausages and bratwurst. There are so many different topping combinations you can choose from! Our personal favorite is the BLT hot dog—a hot dog wrapped in bacon, served with tomatoes, lettuce and drizzled with peppercorn ranch.

Pro Tip | If you’re looking for something gluten-free at the Silos, they offer a chili bowl “Dog Pile” option for you.

$6 Daily Special | Classic Dog served with chips.

Chuck’s Gourmet Popcorn has classic flavors like Kettle Corn and Homestyle (Butter) to gourmet flavors like their Cinnamon Toast and Salted Caramel popcorn. When they are making a fresh batch, you can smell it across the Silos grounds. This stop really does make for a great afternoon snack.

Pro Tip | If you’re on your way back to the car, grab a bag for the road trip home.

This truck is famous for its freshly brewed iced tea. Not only do you get a drink, but a reusable glass jar, too. Try yours sweetened, unsweetened or snag the Mason Dixon—half sweet and half unsweet.

Pro Tip | Bring your jar back for a half price refill!
